Breakfast

In addition to the best coffee in the Caribbean, a choice of fine teas and a vast platter of fresh tropical fruits - mango, papaya, pineapple, banana, strawberries, melons, whatever's good and ripe - you could ask for:

  • Bagels with smoked salmon, capers, onion, & lemon
  • Pancakes stuffed with fresh fruit
  • Warm slices of a freshly baked banana and walnut loaf
  • Eggs Benedict or a Spanish omelette
  • Lunch

    Most days after breakfast, Diana bakes more fresh bread which, depending on your tastes, might include a seven-grain loaf, French-style baguettes, soft wholemeal rolls or Irish soda bread.
    Enjoy them with:

  • Spinach roulade with crab meat stuffing
  • Caesar salad with spicy shrimp
  • Ceviche of conch and other local fish
  • West Indies chicken roti with a selection of chutneys
  • Greek salad with feta cheese & Kalamata olives
  • Squid ink pasta with scallops in a creamy wine sauce
  • Cocktails

    At whatever stage you decide it's time for the days activities, let Bungie demonstrate his prowess with exotic blended creations like bushwhackers, pina coladas, lime margaritas and strawberry daiquiris while Dana titillates your taste buds with a selection of such lip-smacking nibbles as:

  • Smoked oysters wrapped in cream cheese roll with fresh horse radish and onion (an Inxs specialty)
  • Shrimp and mussels wrapped in bacon
  • Crackers with cheeses, hams, salamis * smoked salmon patè
  • Dinner

    The gastronomic delights begin with a superb selection of such mouth-watering starters as:

  • Curried carrot and orange soup
  • Shrimp and scallop au gratin
  • Terrine of leeks
  • Warm pear and walnut salad
  • Entrèes - with fresh al dente vegetables such as asparagus & mange tout, sauced if you wish - can include:

  • Boeuf Wellington with rich wild mushrooms, served wit a red wine sauce and miniature new potatoes
  • Fresh swordfish steaks grilled with a spicy tequila salsa and served on a bed of wild rice
  • Tenderloin of peach-fattened pork stuffed with a delicious mushroom and fresh herb patè
  • A sautè of lobster and shrimp served on angel hair noodles and dressed with home-made basil pesto
  • Fillet of fresh salmon seared in a marinade of honey, ginger, soy sauce & lemon, served with saffron rice
  • Desserts - which can be low-fat if you wish - include a selection of such wicked delights as:

  • Lemon mousse with almond tuilles
  • Pavlova with banana, strawberry or kiwi
  • Amaretto peach tart
  • Tiramisu
  • After Dinner

    Along with a selection of cheeses and a pot of coffee (or Irish coffees of course) served with dark chocolate mints, you may fancy a glass of fine cognac, Grand Marnier, Bailey's, B&B, Cointreau or port (if you let us know before we set sail we'll do our best to accommodate your particular tastes).

    And Finally...

    A word about the bar. While you're on board Inxs feel free to ask for virtually any drink you fancy at any time of night or day. Apart from fine champagnes we draw the line at line at little else and will gladly stock up to meet your preferences. There's always plenty of ice, beers and mixers are kept chilled and we think you'll be pleasantly surprised at our "cellar" of fine wines. Just think of Inxs as a typical Irish pub - but afloat!
