Breakfast 

All breakfasts are accompanied by coffee (regular or decafinated), tea, your choice of juices, and a fresh fruit platter. 

  • Fresh bread, french toast or muffins

  • honey-baked ham and cheddar croissants

  •  Banana-rum pancakes

  • Cereals

  •  A selection of yogurt, honey, jam and marmalade

  • Eggs any style (scrambled, fried, poached, boiled or omelets)

  • Bacon

  •  A selection of ham and cold meats

  •  A selection of fine cheeses

Lunch
Light and refreshing international dishes, including delicious salads, fresh tropical fruits, and desserts.  Your choice of drinks will be served.
  • Creole avocado salad

  • Shrimp cocktail with ginger and lime

  • Tomatoes with melted goat cheese and pistachios

  • Marinated tuna on a bed of fresh greens

  • Creole chicken curry with coconut sauce

  • Aubergine flan with tomatoes and olives

  • Quiche Lorraine with mixed greens

  • Grilled prawns on a bed of wild rice

  •  Cheese souffle

  • Caribbean fish salad with curry sauce

  • Salmon steak in citrus dressing

  • Mouse au chocolat

  • Tropical fruit salad

  • Crème brulee

  • Pineapple Flambe with rum

Afernoon Tea:

  •  A selection of fine English teas

  • Coffee

  • Fresh fruit juice

  • A selection of homemade pastries or cake

Dinner

Each day’s dinner is a four course gourmet meal (appetizer, meat or fish course, cheese, and desert)

  • French onion soup

  • Smoked salmon pate

  • Homemade fish terrine

  • Salmon en croute

  • Warm mushroom salad

  • Beef Wellington with green beans and roasted potatoes

  • Lamb filets with gratin Dauphinois

  • Chicken filets with pesto sauce and fresh pasta

  • Duck filet rose with pineapple slices

  • Tournedos rose with pepper sauce

  • Veal escalopes a la Normande with cream sauce and mushrooms

  •  Red snapper filet with glazed carrots and lemon

  • Grilled lobster with homemade mayonnaise

  • Fresh local fish filets with vegetables

  • Herb-marinated grilled swordfish with perfumed rice

  • Baked dorade on a bed of tomatoes and sweet potatoes

  • Tiramisu

  • Crème caramel with chocolate and chestnuts

  • Bananas flambees Martiniquaise

  • Fresh tropical fruit salad with rum
